More Panini

Whenever we have made panini, we usually toast the bread and slightly melt the cheese in our oven. But no more after this post. This weekend, my husband and I bought a panini grill, the rewards of leftover wedding gift cards. We are very excited to begin making real panini. Stay tuned for more as we try new panini combinations.


In the meantime, enjoy the recipe below for a panini with prosciutto, fresh mozzarella, basil, and tomatoes. The caprese sandwiches are wonderfully fresh, but adding prosciutto adds a salty kick to the sandwich.

Prosciutto & Caprese Panini


Focaccia or ciabatta bread, sliced for sandwiches

2 tomatoes, sliced

8 large basil leaves

fresh mozzarella, thinly sliced

6 slices of prosciutto

olive oil

salt and pepper to taste



Layer the tomato, fresh mozzarella, basil, and prosciutto on the bread. Drizzle a little olive oil and salt and pepper on top of the prosciutto. Place in oven until cheese begins to melt, or place in panini grill until cheese melts.
