Flavorful Fridays: Spinach Salad with Prosciutto & Goat Cheese

This has been a very busy summer for Will and I…much busier than either of us had anticipated. We’ve done lots of traveling all over California for family reunions, friends’ weddings, and even family members’ birthday celebrations. This doesn’t count all the weekends that we’ve hosted friends and family at our own home. All the traveling makes me thankful when we are home and I am able to cook in my own little kitchen once again. That being said, I have lots of yummy recipes to share with you next month (all from the times that we were home this summer), but for today, I will leave you with one more delicious summer salad. I once again used what I had leftover in the fridge to create a salad to accompany pasta. Give it a try, and please let me know what you think!

Spinach Salad with Prosciutto & Goat Cheese


1 bunch spinach, washed

5 slices of prosciutto, thinly sliced

1/2 cup crumbled goat cheese



Balsamic vinaigrette


Place washed spinach in bowl. Add prosciutto and goat cheese. Toss with homemade (or store bought) balsamic vinaigrette. Serve and enjoy!
