Happy Easter!

There is an Italian saying: “Natale con i tuoi, pasqua con chi vuoi,”  which means “Christmas with family, Easter with friends.” This saying rings especially true for Will and I as we do not live close enough to our families to spend every Easter with them. So instead of celebrating Jesus’ resurrection with family, we will be joining friends after church for Easter dinner. In keeping with the idea that Easter is with friends, I decided to make cupcakes to share with our neighbors today. I made chocolate cupcakes, decorating them with “grass” frosting and jelly beans as eggs. For a few of them, I created gum paste eggs and placed peeps inside of them.

Chocolate Cupcakes

Ingredients:

2 cups sugar

1-3/4 cup flour

3/4 cup cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

Buttercream Icing

Ingredients:

1/2 cup shortening

1/2 cup butter

1 teaspoon vanilla extract (almond extract would work, too)

2 Tablespoons milk

3-1/2 cups powdered sugar

1 Tablespoon meringue powder

Directions:

Heat oven to 350 degrees. Prepare muffin tins with paper cups. Combine dry ingredients in large bowl. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into paper muffin cups.

Bake for 22-25 minutes or until wooden pick inserted in center comes out clean. Cool completely. Frost cupcakes with buttercream icing. Serve and enjoy!
